Multi-plotting? A peek into this author's brain

I am always plotting. In-progress work and projects "in development" are omnipresent in my brain ready to be loaded before I go to sleep or between manga readings and anime episodes or, in today's specific case, taking a walk when my iPod needs to be recharged.
I took my phone with me on today's walk deciding I'd record my thoughts, something a lot of authors do I guess but I've never really done it before. I gave it a whirl, just in case I might forget some plotting ideas I came up with as I walked. I can't tell you if this turns out to be useful yet, but what struck me is how many separate projects I have in my head.
"The Guide to Palas" - prequel to "Rock. Stone. Pebble." currently in its final arc
"The Familiar's Mark" - a fantasy novel I have actually written an opening for
"Only in Summer" - the final installment in "Seasoned Tales: A Short Story Collection" currently only in the early "sketch" phase
Unnamed sequel to "The Dragon King Invites You to Tea" - quite a bit of development and planning going on for this one - it excites me
"Fate/Stay NEN" - a new NEN Chronicles story based on the Fate anime series about a battle royale for the "holy grail"
The NEN Chronicles were fictional short stories I wrote as my Christmas gift every year to my IT team mates between 2012 and 2017, each one a different genre
Along with this some plans to publish it on Amazon just so we can get a bound paperback version, but I'll need to acquire permissions from various people
I also want to add "reference notes" concerning inside jokes most people won't get (and we might even forget ourselves)
